Excellent book, I was looking for a complete book about bread. I like bread and I feel nowdays the bread outside my house is terrible, elastic, expesive without soul. I 'd been reading a lot of books from other bread teachers but they are many of them,full of recipes, I asked myself ; Why do I need recipes when I dont even know how Fermentetion works? Ivan gives a full chapter about this important topic, the key for a good loaf of bread. Fully recomended for the home baker....
